Grab your Ranch Water or Clayton Margarita and toast to Cinco de Mayo while enjoying these simple and delicious recipes. As a girl that grew up in Texas, I have a ton of delicious Tex-Mex inspired recipes– here are a few of my favorites!!

ranch water
Ah, Ranch Water! If you’ve never heard of it, Ranch Water is the popular Texan drink to sip on in the summer heat. No, there is not ranch dressing in it!

clayton’s margarita
Clayton’s Margarita is just a good, classic margarita on the rocks with a few little tweaks to make it special. My favorite part? That he adds egg whites to it to make it foamy.

perfect guacamole
But when it comes to guacamole, it is all about the fresh ingredients and with the addition of ground cumin to add warmth to it and the lime for some tang… BAM. It’s just perfect.

queso fundido with chorizo
Nope. This queso fundido is not dairy-free or vegan… in fact, it essentially has zero health benefits to it. What does it have going for it though? It’s really freaking yummy and great for entertaining.

copycat dairy-free chili’s queso
A combination of a quick, paleo compliant enchilada sauce, some browned beef, and some Siete Foods Cashew Queso and voila!

chorizo con papas taquitos
Chorizo con papas, or chorizo and potatoes, is a true Mexican classic and one of my favorites for its bold, satisfying flavors.

mexican street corn dip
Mexican-style street corn is undoubtedly one of my favorite ways to enjoy corn.

shrimp ceviche
Goodness, I absolutely LOVE ceviche. It’s light, healthy, fresh, tangy, and just plain-old delicious!

martha’s mexican rice
One thing Martha, our nanny, makes quite frequently for us and the girls, as it’s a favorite of ours, is her Mexican-Style Rice. It’s simple, uses clean ingredients, and has fantastic flavor that everyone adores.

del corazon ensalada
Dallas folks, do you recognize this salad? Yep, I totally remade Mr. Mesero’s “Del Corazon” salad in my own kitchen because, well, it’s the best.

one-pan mexican chicken and rice
By far, this is my family’s most requested recipe from my book. It’s easy, full of flavor, and one of those weeknight meals every-one just adores!

steak street tacos
Sometimes the best things in life are the simplest things. This recipe? Case in point!

grilled chili chicken tacos with tomatillo salsa
I just know you all are going to love these easy, healthy, grilled chicken tacos!

instant pot texas-style brisket tacos
Texas has given me so many things in life that I am so grateful for– and these Brisket Tacos are one of them

baja fish tacos with mango coleslaw and avocado crema
These fish tacos are rather simple, really. Coated in a delicious spice blend and seared stovetop (you could totally opt to grill them if you’d prefer) and served in grain-free tortillas with a delicious mango slaw and topped with a dairy-free Avocado Crema.

crunchy baked turkey tacos
The most wonderful turkey taco filling stuffed into grain-free tortillas and baked until crispy on the edges and soft in the center for the ultimate taco night!

sour cream and green chile chicken enchiladas
If you can do cheese, these lightened up enchiladas will knock your socks off! They are amazing!

enchiladas con carne
Aka ‘The Best Paleo Beef Enchiladas’

Hi! Question – do we lightly fry the tortillas prior to assembly? I tried to and it made my tortillas hard and too difficult to roll!
Can’t find the recipe?
Hi Cathy! Which recipe are you having issues accessing?
The One Pan Mexican Chicken and Rice – and this isn’t Cathy but I’m having the same problem. I own the book, but I was just trying to find it online to snap it to my husband for shopping…
Hi! That recipe is only published in the cookbook, and not online!
