OMG, it’s finally here! After nearly two years in the making, my first cookbook is published and available for purchase. Most of you can probably remember when I was working all hours of the day on my “secret project,” and this is it! Since weeknight meals are kinda my thing, I’ve decided to share 100 healthy and wholesome weeknight meals with you.
THE DEFINED DISH is a cookbook that all levels of cooks can enjoy. Throughout the book, each dish is clearly marked to show if it is Whole30 compliant, paleo, gluten-free, dairy-free, and more. It is perfect for anyone who has completed a Whole30 and is looking to reintroduce healthful ingredients like tortillas, yogurt, beans, and legumes back into their diet. Recipes like Chipotle Chicken Tostadas with Pineapple Salsa or my Black Pepper Chicken stir-fry are easy to prepare even after a busy day at work. At least 60 of the recipes are Whole30 compliant or include delicious modifications to make when Whole30, such as using lettuce wraps instead of taco shells.

It’s a Little Bit of Everything
As you peruse my book, you will find a little bit of everything. These recipes are all inspired by experiences I’ve had in my lifetime. You’ll find a Tex-Mex chapter and a Southern Charm chapter dedicated to my Southern roots with dishes like Mini King Ranch Casseroles, Chicken-Fried Steak with Creamy Cauliflower Gravy, and One-Pan Mexican Chicken and Rice. You’ll also see my Italian mother’s influence in my chapter titled, Mom-bo Italiano, where I share insanely delicious and health-ified classic Italian dishes like Lasagna-Stuffed Zucchini Boats and Sheet Pan Halibut with Italian Salsa Verde!
The rest are dishes that I’ve discovered through travel, in restaurants, or via friends or family that I’ve adapted in my own kitchen to meet the needs of my family and our taste buds.
