Between keeping up with the kids’ schedules, travel, work, and remodeling our home, I feel like I’ve been busier than ever with very little time to cook. That’s why I love making this Easy Lemon Thyme Roasted Salmon. It proves that dinner can be nourishing and delicious, even when you’re working with minimal ingredients and time in the kitchen!  

Easy Lemon Thyme Roasted Salmon


 

This salmon dish is super simple and calls for less than 10 ingredients — including salt and pepper! What’s more is that everything happens in one baking dish. To make it, you’ll season the salmon with salt, pepper, and paprika, then top with garlic, lemon, and thyme and bake the whole thing off. While it’s in the oven, you can prep one of my favorite easy side dishes like One Pot Cacio e Pepe Israeli Couscous, Shaved Celery and Fennel Salad, Rainbow Chickpea Salad, or Little Gem Salad with Tarragon Green Goddess and have dinner on the table in no time.

ingredients:

  • Salmon Fillets
  • Extra Virgin Olive Oil
  • Kosher Salt
  • Freshly Ground Black Pepper
  • Paprika
  • Garlic Cloves
  • Lemon Zest
  • Lemon
  • Fresh Thyme

step-by-step:

step one: preheat the oven

Preheat the oven to 400℉.

step two: prep the salmon

Place the salmon filets in a large baking dish and pat dry. Drizzle with olive oil and rub evenly into the salmon. Sprinkle with salt, pepper, and paprika. Top with the minced garlic and lemon zest, then scatter the lemon rounds around the salmon. Sprinkle with thyme.

step three: roast the salmon

Transfer to the oven and roast until the salmon is cooked through and easily flakes with a fork, 10 to 12 minutes.

step four: serve and enjoy

Remove from oven, serve, and enjoy!

would this work well with other types of fish?

Yes! You could try it with cod, mahi-mahi, or Arctic char. Just be sure that the fillets are roughly the same size so they cook evenly.

Ingredients 

  • 4 (6- to 8-ounce) salmon fillets, skin removed
  • 3 tablespoons extra virgin olive oil
  • teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon paprika
  • 2 garlic cloves, minced
  • zest of 1/2 lemon
  • 1 lemon, sliced into thin rounds
  • 2 teaspoons chopped fresh thyme leaves

    Easy and delicious, this has quickly become out go to meal when we don’t have anything else planned!

    So delicious and easy. The leftover salmon tasted great cold the next day over some greens also. We made a smaller batch of salmon and the only change we made was just a sprinkle of salt instead of the full amount listed. Will definitely be adding this to my go-to list of dinner recipes!

    This is the best salmon recipe! Rarely, do I find a recipe where the adults and kids eat the same thing, I like to use less olive oil on top and it turns out so yummy! We’d love more salmon recipes! Thank you 🙂

        This recipe is so so good! I was short on time, but it took almost no time or effort at all to make. I served it along some baby bok choy. Yummy!!
