Typically, the summertime calls for relaxed evenings and more time on our hands. I’ve found this to be the complete opposite this year. As we finish remodeling our home and are gearing up to move, I’ve found myself with very little time to cook. This means it’s time to KEEP IT SIMPLE with this Easy Lemon Thyme Roasted Salmon. Food can always be nutritious, taste delicious…even with minimal ingredients and time in the kitchen!
This salmon dish is a super-simple one that my entire family just loved. In fact, Sutton’s response when I asked her if she enjoyed it was, “I usually am not a fan of Salmon, but this is really good.” hah! I loved her mature 7-year old response! I wasn’t sure what they’d think about the fresh thyme in there but they loved it!
I highly recommend you trying out this simple, healthy weeknight Easy Lemon Thyme Roasted Salmon dinner! For more fun salmon recipes try my Easy Creamy Spinach Stuffed Salmon, Easy Crispy Salmon Sticks, OR Spring Sheet Pan Salmon.

We enjoyed this easy to prepare dish tonight. We have a lot of fresh herbs growing in our garden, so added a tiny bit of basil in addition to the thyme. Turn out great and will definitely make this again.
Super easy and smells great! Haven’t gotten it out of the oven yet, but I can’t wait!
I loved this! Very easy to make, which is essential to me. I used less garlic and less salt. I still found it a bit too salty. I did roast garlic first like another reviewer suggested. Overall I will definitely make this in the future!
This was so easy and tasty! This one will be a good staple to have on hand.
Really delicious! We’ve been broiling our salmon but this offered a similarly succulent result and a lot easier to clean up after. My husband actually made it and it required minimal questions which is a huge win for me! ha
One tip. Sauté or forego the garlic. Raw garlic doesn’t work on the fish after a short bake in the oven.
Made this tonight! Fantastic recipe! Thank you.
