Between keeping up with the kids’ schedules, travel, work, and remodeling our home, I feel like I’ve been busier than ever with very little time to cook. That’s why I love making this Easy Lemon Thyme Roasted Salmon. It proves that dinner can be nourishing and delicious, even when you’re working with minimal ingredients and time in the kitchen!

This salmon dish is super simple and calls for less than 10 ingredients โ including salt and pepper! What’s more is that everything happens in one baking dish. To make it, you’ll season the salmon with salt, pepper, and paprika, then top with garlic, lemon, and thyme and bake the whole thing off. While it’s in the oven, you can prep one of my favorite easy side dishes like One Pot Cacio e Pepe Israeli Couscous, Shaved Celery and Fennel Salad, Rainbow Chickpea Salad, or Little Gem Salad with Tarragon Green Goddess and have dinner on the table in no time.

Yes! You could try it with cod, mahi-mahi, or Arctic char. Just be sure that the fillets are roughly the same size so they cook evenly.

Super easy and fast, great late summer dinner using up my garden’s thyme. Served with couscous and roasted parmesan broccoli.
Simple. Elegant.
We enjoyed this easy to prepare dish tonight. We have a lot of fresh herbs growing in our garden, so added a tiny bit of basil in addition to the thyme. Turn out great and will definitely make this again.
Super easy and smells great! Havenโt gotten it out of the oven yet, but I canโt wait!
I loved this! Very easy to make, which is essential to me. I used less garlic and less salt. I still found it a bit too salty. I did roast garlic first like another reviewer suggested. Overall I will definitely make this in the future!
This was so easy and tasty! This one will be a good staple to have on hand.
Really delicious! We’ve been broiling our salmon but this offered a similarly succulent result and a lot easier to clean up after. My husband actually made it and it required minimal questions which is a huge win for me! ha
One tip. Sautรฉ or forego the garlic. Raw garlic doesnโt work on the fish after a short bake in the oven.
Made this tonight! Fantastic recipe! Thank you.
