Here is an oh-so-simple weeknight dinner that is SO deliciously easy — Ginger and Peanut Butter Ground Turkey Stir Fry!

Yeah, yeah…I know exactly what you are thinking — ground turkey is not good. Well, when it is lathered in delicious flavors IT IS! And I can promise you that this Ginger and Peanut Butter Ground Turkey Stir Fry is particularly flavorful and absolutely delicious. It has a hint of ginger, a hint of spice and a touch of nuttiness from the peanut butter that all come together for a flavorful bite. Served the ground turkey over rice (or cauliflower rice if you prefer) and top with a variety of fragrant fresh herbs, and you will have an absolute home run dinner that you’re going to want to add to your weekly dinner rotation.

Ginger and Peanut Butter Ground Turkey Stir Fry

Servings: 4 people

Ingredients 

For the Ground Turkey Stir Fry:

  • 2 tbsp avocado oil
  • 1 large shallot finely diced
  • 2 cloves garlic minced
  • 1 inch knob ginger peeled and finely grated
  • 2 pounds ground turkey preferably dark meat
  • 1 ½ teaspoon kosher salt
  • ½ teaspoon pepper
  • 2 tbsp creamy peanut butter or almond butter *use unsweetened Almond butter to keep Whole30
  • 2 tbsp coconut aminos
  • 1 tbsp rice vinegar
  • ½ tsp toasted sesame oil
  • 2 tbsp lime juice
  • 2 tbsp sriracha
  • 4 green onions thinly sliced (white and green parts)

For Serving:

  • Steamed White Rice *Use Cauliflower Rice for Whole30
  • Fresh Mint Leaves
  • Fresh Thai Basil Leaves
  • Fresh Cilantro Leaves

Instructions 

  • Heat oil in a large nonstick skillet over medium heat. Add the shallot, garlic, and grated ginger and cook, stirring and being careful not to burn, until soften, about 2 minutes.
  • Add the turkey, salt and pepper and cook, breaking up the meat with the edge of a wooden spoon, until the turkey is cooked through and no longer pink, about 7 minutes.
  • Meanwhile, in a small bowl, combine the peanut butter, coconut aminos, rice vinegar, toasted sesame oil, lime juice and sriracha. Whisk until well combined and smooth.
  • Pour the sauce into the ground turkey mixture along with the sliced green onions. Continue to ok, stirring, until the turkey is well coated and the green onions are just tender, about 3 more minutes.
  • Serve over steamed rice, if desired, and top with fresh herbs.

      1. This looks delish! I’m thinking of making it tonight. Do you melt down the peanut butter first so it’s easier to mix with the other ingredients? What do you recommend?

    This has become a regular in our house. Delicious and adaptable, we often add bell pepper or a veggie to the mix. Pro-tip: eat any leftover ground turkey for breakfast/lunch with scrambled eggs mixed in. Trust me, it’s amazing.

  3. My husband & I love this recipe! It’s super easy to make and then it gives us leftovers that reheat really well. We eat it over jasmine rice and sauté veggies in a pan to go with it (i.e. mushrooms, zucchini, bell pepper).
