Here is a fun and festive spritzer that is perfect for celebrating the holiday season. Whether you are entertaining for NYE or a Christmas Dinner, this Rosemary Tequila Spritzer is a definite crowd pleaser!

The star of this spritzer is the rosemary simple syrup. If you’ve never made simple syrup before, don’t be scared. It’s seriously simple! You’ll boil equal parts sugar and water until the sugar is dissolved. After that, you’ll remove from heat, add the rosemary, and let is steep while the syrup cools. It will quickly draw out lots of that earthy, herbaceous flavor, which is what gives this cocktail its holiday spirit!
After that, all you’ll need to do is combine the rest of the ingredients with a bit of the syrup then you’ll be shaking and sipping in no time. Cheers!
ingredients:
- Water
- Granulated Sugar or Monkfruit Sweetener
- Fresh Rosemary Sprigs
- Tequila
- Freshly Squeezed Orange Juice
- Champagne
step-by-step:
step one: Make the Simple Syrup
Add the sugar and water to a small saucepan and bring to a boil, stirring until the sugar is dissolved. Once dissolved, add the rosemary sprigs and steep for 10 to 15 minutes or until the mixture is cool. Strain before using.
step two: Make the Spritzer
Fill a cocktail shaker with ice. Add the tequila, orange juice, and simple syrup and shake vigorously.
step three: strain, garnish, and serve
Strain into glasses, then top with champagne and a sprig of rosemary!
Yes! If you make it with regular granulated sugar, it will keep in an airtight container in the fridge for up to a month.
I like to serve this in a coupe glass, but it would also be fun in a classic flute glass!

I’ve made this exactly as is and just tried it with non-alcoholic/zero proof tequila (Trejo) and NA bubbles. Still just as delish without the alcohol! Thanks for the recipe. Love all your stuff!
Hi Alex, just tested this for Christmas it’s delicious! Have a family member coming who is allergic to oranges do you think you this would be good with cranberry juice or would you do lemon?

Loved this drink! Will absolutely make again. We went with Hornitos Anejo that we had on hand and it paired nicely.
Really fun, don’t skimp on the rosemary garnish, it adds flavor and extra rosemary aroma! We used our leftover simple syrup for lattes for the adults and steamers for the kids the next day!

trying to batch this for Christmas night for 8 guests. When you say shot do you mean 1.5 ounces? also I found kumquats to slice and float on top too. So excited!
