Italian Pasta salad is one of my all-time favorite cold pasta salad dishes! It’s fresh, light, zesty, and just a total crowd-pleaser. This Paleo Italian Pasta Salad is such a great make-ahead for the week for easy grab-and-go lunches (for adults and kids!) and it’s even better to make a huge batch for summer gatherings. I am planning on taking a big batch of this to the lake for Labor Day weekend with Clayton’s family.
You’re probably thinking– how is this Paleo? It’s pasta? Well, I used Jovial Foods’ new Cassava pasta and dressed it with my own Homemade Italian Dressing. This Paleo Italian Pasta Salad turned out so great and I just know you all are going to love it!
Paleo Italian Pasta Salad

Ingredients
- 1 [8-oz box] Grain free fusilli pasta I used Jovial brand Grain Free Cassava Fusilli
- 1/4 cup finely diced red onion
- 1/2 cup quartered cherry tomatoes
- 1/2 cup green bell pepper
- 1/4 cup sliced black olives
- 3/4 cup diced italian salami
- 2 tbsp monkfruit sweetener
- 3/4 cup Whole30 Creamy Italian Dressing
Instructions
- Bring a pot of salted water a boil. Cook pasta according to package instructions.
- In a large bowl, add the red onion, cherry tomatoes, green bell pepper, black olives, salami, monkfruit sweetener and creamy Italian dressing. Add the cooked pasta. Toss until very well combined.
- Chill the pasta salad in the fridge for at least 30 minutes before serving. You can also make this one day ahead and store in the fridge.

He does it much better and is verrrry critical of American “Italian” food (fettuccine Alfredo, I’m looking at you). I made this and he said it is delicious and that I need to make it once a week 😂 Thank you for this gem! You rock!

May 28, 2021 at 8:03 pmThis salad is SUPER good!! Was given a couple bags of mini tortellini to incorporate into a salad for a graduation party. Very easy and the creamy dressing is delicious and so easy. Couldn’t make it gf because of the tortellini but a daughter w celiac makes it gf quite often since her family loves it…she saved the day passing the recipe along to me! Could easily be made into a main meal.
