Paleo Italian Pasta Salad

Italian Pasta salad is one of my all-time favorite cold pasta salad dishes! It’s fresh, light, zesty, and just a total crowd-pleaser. This Paleo Italian Pasta Salad is such a great make-ahead for the week for easy grab-and-go lunches (for adults and kids!) and it’s even better to make a huge batch for summer gatherings. I am planning on taking a big batch of this to the lake for Labor Day weekend with Clayton’s family.

You’re probably thinking– how is this Paleo? It’s pasta? Well, I used Jovial Foods’ new Cassava pasta and dressed it with my own Homemade Italian Dressing. This Paleo Italian Pasta Salad turned out so great and I just know you all are going to love it!

  1. I have to tell you… my husband is from Italy, so I very rarely make Italian food for him. He does it much better and is verrrry critical of American “Italian” food (fettuccine Alfredo, I’m looking at you). I made this and he said it is delicious and that I need to make it once a week 😂 Thank you for this gem! You rock!

    1. It can serve 4-6 people depending on if it is the only side you are serving with your meal or if there are other items. Likely 4 people to be safe!

  2. This salad is SUPER good!! Was given a couple bags of mini tortellini to incorporate into a salad for a graduation party. Very easy and the creamy dressing is delicious and so easy. Couldn’t make it gf because of the tortellini but a daughter w celiac makes it gf quite often since her family loves it…she saved the day passing the recipe along to me! Could easily be made into a main meal.
Thank you so much for posting!

  3. I have such a hard time figuring out what GF pastas are good cold because I feel like they’re all different in their own way but this is a really helpful recipe I got this pasta yesterday and I’m pumped to make this
