September 11, 2021 at 5:29 pmHi, Alex! Love all your recipes (like… literally) and am so excited to make this tomorrow as part of the workweek lunches I pre-pack. I have a question about the pasta: did it maintain its texture? (IF there were leftovers, that is.. lol.)
Some GF pastas tend to take on an almost crunchy, undercooked texture after a couple days and I was curious if you experienced that with this one? Thank you in advance for your response!

September 14, 2021 at 12:21 pmHi Carrie,
It certainly doesn’t hold it’s own like regular pasta does– but it kept surprisingly well. Definitely got a bit more firm in the fridge– but I let it set out at room temp for just a bit before eating and it’s good.

November 6, 2020 at 1:39 pmHave you ever made this using store bought mayo? Just curious
Alex
November 6, 2020 at 5:02 pmYou can definitely do this; however, I find that storebought mayo has more added flavor to it and isn’t as neutral. It changes the flavor a bit. So, just try to select one that is really mild in flavor… I like the Chosen Foods Avocado oil Mayo or Sir Kinsington’s brand.
