My homemade Whole30 Barbecue Sauce has taken over my kitchen lately and I am not mad about it. I wanted to come up with a way to serve sliders that were Whole30-friendly and delicious. I finally nailed this Whole30 Pulled Pork Sliders recipe and I’m so excited to share it with you! 

Whole30 BBQ Pulled Pork Sliders


 

I recently shared my Instant Pot Whole30 Pulled Pork and had some leftovers to play with. I decided to turn some roasted sweet potatoes into buns and I couldn’t get enough of the combination of the decadent pulled pork and the creamy sweet potatoes. It’s a lighter, more nourishing alternative to traditional potato buns, which are often used to make pulled pork sliders. And while those are still delicious, I have a feeling that this may just become my go-to serving method!

step-by-step:

step one: preheat the oven

Preheat the oven to 400°F.

step two: prep the sweet potatoes

In a large bowl, add the potatoes and olive oil. Toss to coat, then season with salt and pepper to taste. Toss once more to coat evenly.

step three: bake the sweet potatoes

Arrange the sweet potatoes in a single layer on a parchment paper-lined baking sheet. Bake for 25 minutes or until fully cooked through, flipping halfway through. Turn the oven to “broil” and cook for about 3 more minutes, watching carefully so that they don’t burn, until crispy.

step four: assemble and serve

Layer the pulled pork, BBQ sauce, pickles, and sliced onions on half of the sweet potato rounds. Top each one with the remaining sweet potato rounds and serve.

can i use store-bought bbq sauce?

Of course! I’m obviously partial to my Whole30 BBQ Sauce, but you can absolutely use your favorite kind for drizzling.

can i make these in advance?

You can definitely make the pulled pork and BBQ sauce in advance, but I’d wait to roast the potatoes until shortly before you’re ready to serve so that they don’t dry out.
