This isn’t exactly one of the healthiest recipes that I’ve ever posted, but I am okay with that because I couldn’t live my life without sharing this absolutely delicious party-perfect recipe with you! Most of the time, I like to make and share feel-good meals, but I am also a real person who isn’t afraid to indulge from time to time.
It was not a party at my parents’ house growing up without a big crockpot of this Velveeta queso. If you grew up in the South, you can probably relate. I was so excited to make my own version of it featuring the ooey-gooey cheese, a duo of ground beef and sausage, and diced chilies and tomatoes. And if this wasn’t a staple at parties and gatherings in your house, I hope you’ll give it a try now!

ingredients:
- Ground Beef
- Hot Sausage
- White or Yellow Onion
- Garlic Cloves
- Kosher Salt
- Freshly Ground Black Pepper
- Cream of Mushroom Soup
- Rotel
- Shredded Mexican-Blend Cheese
- Salsa
- Velveeta Cheese
- Fresh Cilantro, For Garnish
- Fresh Chopped Tomatoes, For Garnish
- Lime Juice, For Garnish
- Tortilla Chips, For Serving
step-by-step:
step one: cook the beef and sausage
Heat a large skillet over medium-high heat. Add the beef, sausage, onion, garlic, salt and pepper and cook, breaking up the meat with the edge of the spoon, until it is browned and no longer pink, about 8 minutes. Use a large spoon to drain the grease from the skillet and transfer the meat to the Crockpot.

step two: build the queso and cook
Add the cream of mushroom soup, Rotel, shredded cheese, salsa, and Velveeta cheese. Stir, cover, and cook on low for about 30 minutes.
step three: garnish and serve
Once melted, you can serve it as is or top with lime juice, chopped tomatoes, and chopped fresh cilantro. Serve with tortilla chips for dipping.

Crockpot Chili Con Queso
Ingredients
- 1 pound ground beef
- 1 pound hot sausage
- 1 small white or yellow onion, diced
- 2 garlic cloves, minced
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1 (10-ounce) can cream of mushroom soup
- 1 (10-ounce) can original Rotel diced tomatoes and green chilies
- 1 cup shredded Mexican-blend cheese
- 1 cup store-bought salsa
- 1 (32-once) package original Velveeta Cheese, cut into 1-inch cubes
- tortilla chips, for serving

Looks unreal! I’m making this for someone with a mushroom allergy, would you suggest substituting with cream of chicken for the consistency or omitting the cream of mushroom all together?
Yes that should work fine
can you freeze it?
I don’t love freezing foods that are heavy in dairy

any substitute for cream of mushroom soup or can I omit?
You can omit, but it does help the cheese to not burn so easily/has better texture when it’s in the slow cooker!
Does it need the cream of mushroom?
I find that it keeps the queso consistency better and prevents it from curdling in the crockpot when you’re entertaining.
Would you be able to do this in the oven and not the slow cooker?
If you cooked it low and slow, covered, and stir occasionally- yes you could! I’d go super low, like 220.
This is SOOOO good I’ve made it 3 times now and the whole thing gets eaten. I want to make this for a work potluck, do you think it would still be good without the meat? 🙂
yes it is still yummy w/o the meat!
I made this last night for the Super Bowl because you can’t have football and not serve queso. This is the best queso I’ve ever made. This will definitely be made for every sporting event going forward!
