Thai Salmon Burgers

These Thai-Inspired Salmon Burgers, y’all…OH MY GOODNESS they are just unreal. They are light and delicious yet oh-so-satisfying. You’re going to want to make them for the rest of the summer! 

Whether you decide to serve these Thai Salmon Burgers in buns, over a salad, or in lettuce leaves for a bun-less burger, you just can’t go wrong. They are such a light and fresh meal and the flavors inside will just blow your mind and keep you wanting MORE. The Thai chiles give it a good spicy kick, the fish sauce adds some serious umami, and the aioli on top adds a nice, cool touch.

Thai Salmon Burgers

For the Salmon Burgers
  1. 2 pounds center cut salmon, boned and skinned
  2. 1 large shallot, finely diced
  3. 1 tablespoon finely chopped lemongrass
  4. 1 teaspoon kosher salt
  5. 1/2 teaspoon black pepper
  6. 2 birds eye chiles, finely chopped (or sub 1 tsp. finely diced Serrano pepper)
  7. 1/2 teaspoon peeled and freshly grated ginger
  8. 2 cloves garlic, minced
  9. 2 tbsp. freshly chopped cilantro
  10. 2 tbsp. freshly chopped Thai or regular basil
  11. 1 tbsp. freshly chopped mint
  12. 1 egg, well whisked
  13. 2 teaspoons fish sauce
  14. 2 teaspoons cassava flour
  15. 1/4 cup super fine almond flour
For the Aioli
  1. 1/2 cup of Homemade Mayo or Whole30 Compliant Mayo
  2. 2 cloves garlic
  3. 1 tbsp. Fresh lime juice
  1. In a bowl, combine all of the "for the aioli" ingredients and stir to combine. Place in the fridge until ready to serve.
  2. Place half of the salmon in a food processor. turn on and blend until just mixed, about 2-4 seconds. You don’t want it over processed. Transfer to a bowl. Do the second batch of the salmon. (I do this in batches to prevent over blending the salmon).
  3. Add the shallot, lemongrass, kosher salt, pepper, chiles, ginger, garlic, cilantro, basil, mint, fish sauce, egg and cassava flour into the bowl with the salmon. Using a fork, stir to combine.
  4. Pour the super fine almond flour onto a plate.
  5. Using a measuring cup, scoop 1/2 cup of the salmon mixture out at a time and place into hands, forming gently into a burger patty. Place the salmon into the almond flour and coat all aside of the salmon burger with the flour. Gently press once more to reinstate the patty with the almond flour.
  6. Heat a large skillet over medium-high heat with 2 tbsp. of olive oil. When hot, fry the burgers on each side until golden brown, about 3-4 minutes per side. Transfer to a plate lined with paper towels to drain excess oil when cooked.
  7. Serve in a brioche buns or in between butter lettuce cups for a bun-less burger option.
  8. Topping Suggestion: Sliced avocado, sliced radish, extra mint, basil and cilantro.

  1. These are INCREDIBLE! Just finished eating them and I already can’t wait to make them again. They’d be even better during the summer with herbs fresh from the garden. Don’t skip the herbs as a topping in addition to inside the burger!
