Crock Pot Chipotle Brisket Tacos

Get ready for a FIESTA!! These simple Crock Pot Chipotle Brisket Tacos are a-maz-ing! We highly recommend that you make some pico with this dish cause the fresh, lemony flavors really pair nicely with the brisket. Plus, pico only takes about 5 minutes to whip up. Hope you guys enjoy it!

Crock Pot Chipotle Brisket Tacos

Crock Pot Chipotle Brisket Tacos Ingredients: serves 4

  • 1  lb. of brisket
  • 1 red onion, chopped into large chunks
  • 6 cloves of garlic, peeled and smashed
  • 1 tsp. cumin
  • salt and pepper, to taste
  • 1 tbsp. apple cider vinegar
  • 2 chipotle peppers from an 11oz. can chipotle peppers in adobo sauce (you can find in the Mexican section of grocery store)

  • 1 cup of chicken or beef broth.
  • 1/4 cup of lime juice (the juice of about 2 limes)

Method:

1.  Place chopped onion and the smashed cloves of garlic in the bottom of the Crock Pot.

2.  Season the top of the brisket generously with: salt, pepper, cumin and cayenne pepper.

3.  Place the seasoned brisket on top of the onions in the crock pot.

4. Loosley chop up the chilpotle peppers from the can on a cutting board, saving all of the sauce they are in.  Pour the sauce and the chopped peppers over the brisket.

5.  Pour the cup of broth, the juice of the lime and the vinegar around the brisket in the crockpot.

6.  Now add in the chopped cilantro.

7.  Cover and cook on low for 8-9 hours or on high for 4-6 hours.

8.  When cooked, remove the brisket onto a cutting board.  Using two forks shred the brisket.  Once shredded, place all the meat back into the crockpot on “warm”.  Keep there until ready to serve!

Serving Suggestion: Serve on corn tortillas and top with pico de gallo with a lime wedge on the side!

Pico De Gallo: (optional)

  • 1 medium tomato, chopped into small cubes
  • 1 tbsp. lime juice, or more to taste
  • 1/2 cup red onion, thinly chopped
  • 2 sprigs cilantro
  • 1 tsp. garlic powder
  • salt and pepper, to taste

*Blend ingredients above and let flavors marinate in the fridge for at least 30 minutes.

At one time you had a recipe for Chipolte beef brisket- made with chipotle chili pepper, cumin,onion more powdered type spices- My family loved it and while the chipotle taco recipe looks similar it does not have the chipotle chili powder. would you please tell me how to access the old recipe? thanking you in advance
