Rosemary Tequila Spritzer

Ingredients

For the Rosemary Simple Syrup:

  • 1 cup water
  • 1 cup granulated sugar or monkfruit sweetener (see note)
  • 2 fresh rosemary sprigs

For the Spritzer:

  • 2 ounces tequila, such as LALO
  • 1 ounce freshly squeezed orange juice
  • 1 ounce prepared rosemary simple syrup
  • Champagne, to top
  • fresh rosemary sprigs, for garnish

Instructions

Make the Simple Syrup:

  • Add the sugar and water to a small saucepan and bring to a boil, stirring until the sugar is dissolved. Once dissolved, add the rosemary sprigs and steep for 10 to 15 minutes or until the mixture is cool. Strain before using.

Make the Spritzer:

  • Fill a cocktail shaker with ice. Add the tequila, orange juice, and simple syrup and shake vigorously.
  • Strain into glasses, then top with champagne and a sprig of rosemary!

Notes

The recipe for the simple syrup will make more than what you need to serve two. If you are only serving two, I would cut the recipe in half. 
If using monkfruit, the simple syrup will crystallize if not used immediately. If you want to have extra syrup on hand, I would recommend using real sugar so you can store it in the fridge for up to one month.
