Bacon-Wrapped Butternut Squash Bites

Ingredients

  • 1 butternut squash
  • 16 strips bacon
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder

Instructions

  • Preheat the oven to 375°F.
  • Soak about 32 toothpicks in a small bowl of water to prevent them from burning in the oven.
  • Cut off both ends of the squash. Peel the squash with a vegetable peeler, cut in half, and remove the seeds with a spoon. Dice the squash into approximately 1-inch cubes.
  • Cut the bacon down the middle in half. Wrap one strip of bacon around a butternut squash cube. Secure the bacon with a toothpick and place on baking sheet. Repeat with the remaining squash and bacon.
  • In a small bowl, combine the garlic powder and chili powder. Sprinkle the spice blend evenly over the butternut squash.
  • Bake for 30 minutes until the bacon is crispy. Serve warm and enjoy!
