Whole30 Pulled Pork Sliders

Ingredients

For the Sweet Potato "Buns"

  • 1 large sweet potato
  • 1 tablespoon extra virgin olive oil
  • kosher salt, to taste
  • freshly ground black pepper, to taste

For Assembly

  • 2 cups Instant Pot Whole30 Pulled Pork
  • 1 cup Whole30 BBQ Sauce
  • dill pickle chips
  • thinly sliced yellow onions

Instructions

  • Preheat the oven to 400°F.
  • In a large bowl, add the potatoes and olive oil. Toss to coat, then season with salt and pepper to taste. Toss once more to coat evenly.
  • Arrange the sweet potatoes in a single layer on a parchment paper-lined baking sheet. Bake for 25 minutes or until fully cooked through, flipping halfway through. Turn the oven to “broil” and cook for about 3 more minutes, watching carefully so that they don’t burn, until crispy.
  • Layer the pulled pork, BBQ sauce, pickles, and sliced onions on half of the sweet potato rounds. Top each one with the remaining sweet potato rounds and serve.
