Clayton's Holiday Margarita

Ingredients

  • 1 cup blanco tequila, such as Lalo or Casamigos
  • 1/4 cup Cointreau
  • 1/2 cup simple syrup
  • 1/4 cup fresh lime juice
  • 1/4 cup unsweetened pomegranate juice
  • 1 teaspoon egg whites
  • flaky salt, for serving
  • fresh rosemary sprigs, to garnish

Instructions

  • In a large blender, combine the tequila, cointreau, simple syrup, fresh lime juice, pomegranate juice, and egg whites in a high-powered blender. Blend until very frothy, 30 seconds to 1 minute.
  • Pour over a salt-rimmed glass filled with ice. Garnish with a sprig of rosemary and serve!

Notes

Clayton says he never stores his batch of margaritas in the fridge, as they tend to get tart in the fridge. Instead, he leaves the mixture on the counter so people can serve up their own glasses. If the foam begins to dissolve, simply blend again before pouring another round.
