5-oz cans albacore tuna in water, drained (no salt added)
loosely chopped green onion
white and green parts
of red seedless grapes
Whole30 approved mayonnaise
or Primal Kitchen's
or to taste
juice of 1/2 lemon
Combine all ingredients in a large bowl, using a fork stir to combine all ingredients until just blended.
Served over a bed of baby spinach (I've also had over
Organic Girl Supergreens
) then drizzle with olive oil and a squeeze of some fresh lemon juice, salt and pepper.
You can store this in the fridge for up to a week, it's even better as it sits and sometimes I add a little extra lemon juice prior to serving if I think it needs it!
