25-oz cans albacore tuna in water, drained (no salt added)
1tbsp.olive oil
1/4cuploosely chopped green onionwhite and green parts
1/2cupof red seedless grapeshalved
2tbsp.Whole30 approved mayonnaiseI use homemade or Primal Kitchen's
1tsp.curry powder
1/2tsp.kosher saltor to taste
1/4tsp.black pepper
juice of 1/2 lemon
1/4tsp.minced garlic
Instructions
Combine all ingredients in a large bowl, using a fork stir to combine all ingredients until just blended.
Served over a bed of baby spinach (I've also had over Organic Girl Supergreens) then drizzle with olive oil and a squeeze of some fresh lemon juice, salt and pepper.
Notes
You can store this in the fridge for up to a week, it's even better as it sits and sometimes I add a little extra lemon juice prior to serving if I think it needs it!
