Horiatiki Salad

Ingredients

For the Horiatiki Salad:

  • 3 medium vine ripe tomatoes, sliced into 8 wedges
  • 1/2 small red onion, very thinly sliced
  • 1/2 medium cucumber, halved lengthwise and very thinly sliced
  • 1 small green bell pepper, core removed and thinly sliced into rounds
  • 1/4 cup pitted and drained Kalamata olives
  • 3 ounces feta cheese

For the Greek Dressing:

  • 2 tablespoons extra virgin olive oil
  • 2 garlic cloves, minced
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

For the Horiatiki Salad:

  • In a large bowl, combine the tomatoes, red onions, cucumbers, green bell peppers, and Kalamata olives. Top with the feta cheese.

For the Greek Dressing:

  • In a small mixing bowl, whisk together the olive oil, garlic, lemon juice, red wine vinegar, oregano, Dijon mustard, salt, and pepper. Drizzle over the salad immediately before serving.
