Sausage and Bell Pepper Skillet

5-ingredient and super easy Whole30 dish!
Cook: 20 minutes
Servings: 2 people

Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 lb Italian Sausage, cut into 2 inch pieces
  • 2 bell peppers, seeded and sliced thin (I use one red and one green. But any are fine)
  • 1/2 yellow onion, sliced thin
  • kosher salt, to taste
  • black pepper, to taste
  • 1 cup store bought marinara
  • 2 cups baby arugula, for serving

Instructions

  • Heat oil in a large skillet over medium-high heat.
  • Add the cut sausages to the skillet and brown on both sides, 2-3 minutes per side. Transfer brown sausages to a plate and set aside.
  • Add the sliced bell peppers and onions to the skillet with some salt and pepper and cook, stirring, until tender, 4 to 6 minutes.
  • Pour in the marinara and stir to combine. Nestle the sausages into the sauce and let simmer to reheat the sausages, about 3 more minutes.
  • Serve over a bed of arugula, enjoy!

this was absolutely delish!! I used fresh italian sausage from my local market and it was yummy!!! I used arrabiata marinara sauce which gave it a nice kick. i also added some garlic to the sauteed onions before adding peppers and it gave it nice flavor. I would definitely make this again!

LOVE this recipe! Mouth watering as I prep for my Whole30. Alex, do you have a recommendation for a brand of Italian sausage that’s WHOLE30 compliant?

    Thank you, Jennifer (@doubleportion_htx)

    1. Hi Jennifer,
Whole Foods actually doesn’t add sugar to their italian sausage (or at least in the past they didn’t!)

So so so so good! I can’t believe how delish it is! I had fresh mushrooms in the fridge leftover from another meal so I threw those in with the onions and bell peppers. Added some extra marinara to compensate. Thank you for a delish and quick meal!

  4. This is going to sound crazy – but how do the ends of your sausages look so perfectly cut? Mine are literally exploading out of their casings. I used fresh Italian Sausage from the Sprouts butcher counter.

    1. I too wondered same! It’s not perfect, but I use kitchen sheers to cut mine, and it is a bit less “exploding” than using a knife. Hope this helps!

  5. Excited to make this for my first Whole 30! Me and my bf aren’t huge arugula fans. Any other suggestions what to serve it with? Thanks!

  6. I feel ridiculous for crushing on this dish as much as I am—because it’s SO easy and simple—but it really is so delicious and filling. It’s now easily one of my go-to’s for meals during the week. Thank you for this whole 5-ingredient series!
