This Jalapeno and Ginger Chicken Salad was one of those creations based on things that I had in my fridge/pantry that was so delicious, I had to share! A nice, fresh, asian-y chicken salad that takes about 15-20 minutes from start to finish to throw together, I love it! I hope you all love this Jalapeno and Ginger Chicken Salad as much as I do!

Jalapeno and Ginger Chicken Salad

Ingredients
- 4 chicken breast tenders
- 1/2 jalapeno, sliced
- 1 tsp. minced ginger
- 1 tsp. minced garlic
- 2 tbsp. olive oil
- 1 tbsp. organic tamari (use Coconut Aminos if Whole30)
- 1/4 red onion, sliced
- 3 baby bella mushroom, sliced
- Juice of 1 lime plus 1 wedge for serving
- salt and pepper, to taste
- 1/2 head of romaine lettuce
Instructions
- Heat 2 tbsp. olive oil over medium high heat.
- Season both sides of chicken tenders with salt and pepper. Place in the hot oil and saute for about 2 minutes on one side.
- Add in the sliced jalapeno, the onions, mushrooms, the garlic and the ginger and continue to saute, stirring occasionally for about 5 more minutes.
- Stir in the organic tamari or coconut aminos. Saute for about 2 more minutes, or until chicken is cooked through.
- Pour entire contents over a bed of romaine lettuce and serve with a wedge of lime.
